Chef Mark Best is a multi-talented chef, founder of the critically-acclaimed ‘Marque’ in Sydney, whose culinary capabilities have received critical-acclaim around the globe. He is the founder and creative inspiration behind Genting Dream’s ‘bistro’ restaurant, his first signature restaurant at sea. Since the founding of ‘Bistro by Mark Best’ on Genting Dream Chef Best has refined his bistro concept, splitting it into Seafood Grill by Mark Best and Prime Steakhouse by Mark Best.
The Seafood Grill and Prime Steakhouse by Mark Best are really a maturation of the bistro concept. A change in itinerary meant a different audience and different cultures so as a chef that reacts to these elements, change was in order.
Seafood Grill by Mark Best The Seafood Grill continues Chef Best’s East meets West Australian style where he innovates using tradition and cultural elements with dishes like the Kingfish, Finger Lime and Kiwi Fruit Ceviche, Swordfish Tonkatsu or the delicious Lobster Rendang. The Murray Cod Three Rivers remains and is already an onboard classic. The showstopper is, of course, a seafood display as you pass the restaurant. A literal mountain of ice covered in the best produce we can source including stunning Sydney Rock Oysters from Chef Best’s supplier, Ewan McCash the Murray Cod also from New South Wales, Hokkaido Scallops and Alaskan King Crab.
Prime Steakhouse by Mark Best The Steakhouse has references to a classic French Brasserie and New York Steakhouse Style along with a Trip to Italy via some classic pasta dishes with all of the pasta made daily in our kitchen. Our meat is from Australia and showcases some incredible beef from Rangers Valley with cuts like the Rangers Valley 6+ marble score tenderloin or the 300gm Porterhouse. Simply grilled there is really nothing better. There is also some fabulous slow cooked Wagyu Ox cheek with silken mashed potatoes when you are in the mood for a bottle of Grange from our extensive cellar list.

Pre-book a meal at Seafood Grill by Mark Best or Prime Steakhouse by Mark Best on or before 31 March 2019 and present a valid receipt ($0 receipt excluded and the receipt must be in member's name) for your meal at the DreamElite Member Information Counter on Deck 6 before disembarkation to receive a complimentary Dream Cruises USB hub. Each member can enjoy once per cruise only. The exclusive gift is subject to availability, and we reserve the right to change the gift without prior notice
